For a hearty, rustic, and delicious treat, try these overnight buttermilk oatmeal pancakes. They are incredibly satisfying!
Combine the dry ingredients with the oat/buttermilk/butter/egg mixture and stir until combine. This will be a very thick batter.
Heat a non-stick pan or griddle to medium. Coat with vegetable oil. Scoop three 1/4 cup servings of batter into the pan and spread gently with the back of a spoon as needed and cook until one side is nicely browned. You will notice bubbles on the tops and the edges getting set. Flip and cook until the second side is browned. Re-grease the pan as needed and continue to cook the rest of the batter. Pancakes can be held in a 200 degree oven prior to serving.
Enjoy the oatmeal pancakes with maple syrup. Add sliced bananas or blueberries if you desire an added layer of beauty and flavor.
