Every once in a while it’s great to have some rustic, crunchy French fries at home. Deep frying them is a serious pain, and restaurant-made fries don’t deliver well, so what to do?
My answer to the fries at home problem is high-temp convection (or traditional) oven roasting with olive oil on a rack.
Although fries made this way are a bit different comparable to their deep fried version, they are delicious in their own way with crunchy deeply-browned skins and tender middles. Avoiding the deep fryer saves on calories and a lot of the fat of traditional fries, and they are also quick and easy to make without a lot of cleanup or oil storage.
So next time you’re jonesing for mini white castle style burgers or barbecued maple syrup sloppy joe’s, whip up a batch of these super easy, always delicious oven fries.
Wash the potatoes and dry. Leaving the skin on, cut the potatoes lengthwise into thick matchstick-shaped slices. Do this with a large knife or a French fry cutter.
Place potato pieces into a large bowl and rinse with cold tap water. Repeat. Fill the bowl with cool water and allow to soak for 20 - 30 minutes. Finally empty the water and rinse a final time. This process removes excess starch from the potato pieces.
After soaking and rinsing the potato, dry the slices using a salad spinner and paper towel. Return the dried potato slices into a large bowl and add olive oil, coarse salt and freshly ground black pepper. Toss to coat evenly.
Once oiled and seasoned with salt and pepper, transfer the fries onto a wire rack placed over a large sheet pan (protects oven from drippings). Organize and space the fries on the wire rack to encourage even cooking and oven roast at 450℉ using convection if your oven is convection equipped. If not, just use standard bake settings but increase temperature to 475℉. Roast until golden brown, about 15 - 20 minutes.
